The stone and brick building with its glassed-in terrace on the approach into Padstow is where it all began, it being Rick Stein's stellar career around these parts, but in some sense also Padstow itself, which had been an unassuming north Cornish fishing village, and now looks very much the international tourist destination. Inside, the place still feels fresh and energetic after all these years, with a sense of busy fun pervading most service sessions. People sit around the bar to watch the shellfish platters being assembled, there is a plethora of heterogeneous artwork to catch the eye, and striking thin pendant light fittings to illuminate the evening scene. The experience may well begin with a crisp salt cod fritter to establish the mood, and the simplest things are still done with inspiring confidence, as with the deeply concentrated traditional provençal fish soup, the portion decanted at the table, with smouldering rouille, croûtons and parmesan on the side. Main might be a straightforward piece of turbot singing with freshness, gently sauced with tarragon-scented béarnaise, but there are also hake baked with onion, garlic, lemon and bay, or perhaps a fiery Goan-style cod curry with cumin pooris. Then calm the palate at meal's end with a properly fragile pannacotta and pistachio cream.
