The hotel stands in seven of its own acres, with a woodland path winding down to the private beach and cove on Gerrans Bay, a restorative location near a slip of a village on the South West Coast Path. The restaurant is bright and airy and a fitting context for Chris Eden’s technically innovative and exciting food. Local materials feature, with expressive seafood dishes a particular strength. Start with line-caught mackerel in seaweed with Porthilly oyster mayonnaise, pickled kohlrabi and dashi, and then proceed to red legged Boconnoc partridge with parsnip, chestnut, quince and sprouts. If you’re on a meatier roll, it could be the lamb loin with dolmades, hen of the woods, courgette, pine nuts, feta and black olive, followed by the 40-day-old fillet of ruby red beef cooked over coals, smoked bone marrow, garlic and spinach. The house dessert is the Cornish classic ‘thunder and lightning tart’ – a clotted cream custard with a crushed almond base.
