Those in search of sweetness and light in the far southwest might consider drifting in the direction of Driftwood, a boutique hotel perched like elegant flotsam above Gerrans Bay. A woodland path connects it to its own bit of beach and sheltered cove, while inside, daylight pours in to a dining room done in delicate marine blue and sparkling-spray white, and the sunsets look as though they might have been bought from Heaven's mail-order catalogue. Chris Eden matches this laid-back mood with cooking of compelling intensity, showing off local materials to dazzling effect. A starter serving of breast and confit legs of roast pheasant in a unifying jus gras comes with a welter of accompaniments, including mushrooms duxelles on sourdough toast and apple and barley emulsion, ahead of water-bathed monkfish finished in butter, along with both types of artichoke, dressed in ginger, miso and toasted sunflower seeds, or grilled red mullet and mussels. Otherwise, there may be moorland hogget loin with roast shallots, aubergine, olives, pine nuts and feta, the whole plate powerfully scented with rosemary. The grand finale could be a lemon hommage, with lemon and lemon verbena sorbet, lemon gel tart and crystallised lemon under a nutty foam that evokes the rushing waves below.
