A couple of miles south of Llandudno, Bodysgallen is a supremely elegant stone-built Stuart mansion in 200 acres of parkland. In the immediate environs of the house, a box-hedged parterre laid out in the 17th century is redolent of herbs to this day. Inside, the sober oak panelling is softened by garden views through mullioned windows framed by gathered drapes, and by sympathetic, personable service. Balancing traditional and modern British modes has become an essential skill of today's aspirant chefs, and John Williams possesses it in abundance, garnishing crab cocktail to start with a cod cheek fritter and saffron-scented cucumber jelly, and then brioche-crusting thoroughbred Welsh lamb for slow-roasting and serving in thyme jus with smoked sweet potato purée. For an aromatic sensation, Creedy Carver chicken is poached and grilled, and partnered with a truffled crush of Mayan Gold potato and matching truffle cream. The marine option might be monkfish, royally treated with aubergine variations, wine-glazed artichoke and butter-braised baby gem, and scarcely anything impresses like a soufflé to conclude, flavoured with pear and ginger, served with fennel ice cream.
