Imperiously enthroned on a wooded slope overlooking the village, the hotel started life in 1850 as a kind of Elizabethan Gothic Neverland for one of Manchester's industrial plutocracy. Over the ensuing century, it passed from one moneyed family to another, before being used as a billet for US servicemen during the war years. Despite its rather forbidding look, it makes an entirely apposite country-house hotel for the modern age, kitted out with all the facilities you would expect at this level, including a dining room, the Alderley, of surpassing magnificence, all crisply starched cloths and swagged drapes. The kitchen's approach is to take dishes that have recognisable origins in traditional British cooking, and subject them to productive glamorising, with fashionable ingredients and artful presentations to the fore. A reworked ploughman's lunch starter brings together a pork pie fritter, Montgomery cheddar and spiced beer and apple jelly, although the prawn cocktail does quite well without any extraneous sprucing up - it really is prawns, tomatoes, iceberg and Marie Rose dressing, with a poached Scottish langoustine watching over it. The lobster thermidor starter, served with lobster and salmon tortellini and sea veg, is a little more, well, Alderley Edge. At main course, you might delve into the regional cookbook for variations on lamb hotpot, made with Cumbrian fell-bred lamb and pickled red cabbage, or look to a slow-cooked fish dish of turbot and cockles, with textured artichoke, wild mushrooms and pommes Anna. Desserts to make you feel looked after include a liquid-centred white chocolate parfait with banana variations and toffee sauce, as well as Caribbean-themed coconut pannacotta with rum-poached pineapple, fragrant with lime and coriander. Then again, a wodge of apple pie with Calvados custard might do. The cheese menu is a treasure-trove of English artisan masterpieces, served with treacle, walnut and raisin bread.
