A dapper 18th-century pile, Mottram Hall’s attractions run to golf, pampering in the spa, and modern country-house dining in the classy Carrington Grill. The food keeps step with the times and is well prepared from high-quality raw materials, starting out with a pairing of seared scallops and pulled belly pork bonbons balanced with pickled carrots and spiced carrot purée. Next up, guinea fowl breast arrives with celeriac purée, crispy ham, pumpkin seeds and thyme jus, or fish fans might go for pan-fried hake with peas, baby gem, tarragon velouté and potato fondant. To finish, vanilla crème brûlée is jazzed up with roasted plums, hazelnut granola and blackberry purée.<
