The Pointer's roots extend deep into its local community. As well as being a welcoming country pub in the picturesque village of Brill near Aylesbury, it also encompasses a working organic farm and kitchen garden, as well as an adjacent butcher's shop for take-outs of its pedigree meats. The interior has an almost late-medieval feel, with heavy low beams entwined with bare twigs and exposed roughcast stone walls in the dining room, leavened by simple modern prints. The kitchen makes resourceful use of the farm produce, beginning a menu perhaps with Longhorn beef tongue salad with sweetbreads and celeriac slaw, or slow-cooking the beef itself for a cannelloni presentation with mushrooms, burnt onion and black radish. Mains might then move on to Middle White pork – the belly and miso-glazed cheek – served with trendy kohlrabi and a purée of caramelised pear, or a rough puff venison pie with cardamom gravy and beetroot ketchup. If you're not a meatie, try Cornish pollock with curried mussels, or a versatile wild mushroom risotto, while inventive dessert constructions include minted blood-orange posset with almond brittle, or rice pudding with Yorkshire rhubarb, honeycomb and sorrel. British artisan cheeses include some fine local specimens, served with grape chutney.
