The nearby Fat Duck’s culinary pyrotechnics aren’t for everyone’s tastes or budget, so for a glimpse of that Blumenthal wizardry consider what was once Bray’s village boozer, where Heston offers true-Brit cooking in tune with the building's 15th-century heritage. The space is split between a clubby lounge bar upstairs with eccentric hunting-lodge touches in its funky decor, while the main ground-floor restaurant offers a carte, a five-course taster or a budget-friendly set-lunch menu, all offering well-crafted versions of robust British dishes. Layers of clear flavours are key to a modern take on Waldorf salad, with caramelised scallops highlighted by celery gel and flowers, pickled and candied walnuts, sea vegetables and dill oil. Technically astute cooking produces a delightful main course of chicken and Alsace bacon with grilled lettuce, broad beans, pea purée and mint oil. Pudding is so simple but so good: zingy lemon tart helped along by racy raspberry and verbena sorbet.
