You wouldn't know it from the slick interior, but a 300-year-old building is at the heart of this stylish contemporary restaurant. Bluebells was conceived with a high-end clientele from nearby Ascot and Windsor in mind, so a designer makeover has transformed the interior with a glossy magazine look - gauzy voile curtains divide the open-plan space into bar, main restaurant and conservatory areas without reducing the sense of wide-open space, while exposed brick, darkwood floors, white-leather seats and a muted olive colour scheme give the place a highly-polished feel. Smartly engineered dishes offer a light touch, like a dainty trio of crab cakes dressed in a fresh sweet chilli sauce. Next, flavours, colours and textures all combine perfectly in a dish of slow-braised belly pork with apple and cider foam, red onion marmalade and bubble-and-squeak. Creative and confident to the end, the curtain comes down on a ginger-infused winter fruit pudding with home-made honeycomb ice cream coated in crushed pistachios.
