Set on a hillside overlooking the watery wonder that is Cardiff Bay, The Pilot has seen immense changes since it originated as a dock-workers' pub. Transformed like the harbour and docklands at its feet, the pub is now a popular destination where drinkers and diners are equally welcome. With craft beers from the respected VOG Brewery in Barry and ciders from Gwynt y Ddraig to slake a thirst, attention can turn to the ever-changing fare outlined on the chalkboard. Pub classics mix with modern British dishes on a pleasing choice that may feature pan-seared scallops, squash purée and truffle salad; and an 8oz Welsh rib-eye.
