Part of the 12,000-acre Goodwood Estate, the newly named Farmer, Butcher, Chef restaurant at this luxurious hotel uses pork, lamb and beef from the estate’s organic home farm. Although there are plenty of fish and vegetarian options on the menu, home-reared meat dominates, whether it’s a starter of beer braised lamb belly, prunes, turnips and barley sauce or a main course of Red Sussex rump of beef with oxtail, stuffed shallot and salsify. Puddings are traditional and high on the comfort factor, perhaps Bramley apple crumble soufflé with cider brandy ice cream or lemon and rosemary baked Alaska to share.
