Roka is characterised by top-drawer ingredients, with the freshest of seafood, to-the-second timings and artful presentation. The speciality is robatayaki: contemporary-style Japanese barbecued food. Examples are skewers of chicken with spring onions and tender smoked duck breast, charred on the outside, pink inside, with barley, miso and sticky, intense kumquat paste, or black cod marinated in yuzu miso with home-made hajikami. Sushi are good bets too, such as Wagyu gunkan (beef sushi with Oscietra caviar, spring onions and ginger), as are hotpots like lamb with crab and wasabi tobiko. Puddings include Japanese pancakes with banana, toffee and black sugar syrup, and cherry blossom ice cream accompanying almond crème brûlée.
