A blast of South American vivacity in Covent Garden. Tiger's milk is a zesty citrus marinade for producing sea bream céviche, which comes with thick avocado purée, crisp-dried onions and toasted puffed cancha corn. More corn, whizzed up this time, comes with chicken chalaca for main, served with gentle aji panca chilli sauce, and given texture with purple potato 'paper' and slivers of raw asparagus. Peru pretty much invented the potato, so expect lots of it, as well as a similar tuber, olluquito, which comes here with suckling pig. To finish, fine Palo Blanco chocolate is turned into a rich mousse, topped with oats and garnished with honeycomb and nasturtiums.
