Now relocated as the Glenmoriston's main restaurant, Contrast's single window doesn't let in much daylight, but in the evening, with a pianist playing soft, funky music, the low lighting and modern decor, the atmosphere is rather romantic. Scottish produce is used here in, for example, Shetland mussels and seared carpaccio of Ardgay venison, but overall we're talking modern British cooking. Look for smoked ham hough (hock) and rabbit terrine, black pudding bonbon and spiced piccalilli, or pan-fried loin of red deer, hazelnuts, beetroot, truffled pommes purées and red wine jus. To finish warm chocolate and salted caramel fondant, served with raspberry ice cream and topped with a chocolate tuille.
