A modern hotel with a bright and welcoming restaurant and a policy of sourcing produce from within 20 miles. Start with baked scallops with pancetta lardons and leeks in a creamy fish sauce, accompanied by a brioche topped with parmesan and herbs, or corned beef hash with black pudding, brown sauce and a fried egg. Main courses take in a trio of lamb (tender roast rump, cutlet and haggis spring roll), with honey and whisky sauce providing a good contrast, served with dauphinoise potatoes, as well as, say, grilled smoked cod loin on paella (prawns, chicken, chorizo and mussels). End with a familiar dessert like knickerbocker glory or sticky toffee pudding.
