The Victorian pump-house building on Llanelli's North Docks has been reinvented as a powerhouse on the national culinary scene. Original exposed stone work, traditional wooden beams, commissioned oil paintings and a steel and brass bar top reclaimed from an original steel water tank lead the way to the open-to-view kitchen. The modern dishes are carefully conceived and intriguing and might include hay baked celeriac, smoked celeriac tea and celeriac textures, being set alight at the table, for a theatrical scent. The main could be Yorkshire Mangalitsa pork, with smoked beetroot and black pudding puree, or cod five ways, cabbage puree and salt and vinegar chips to name but a few. Dessert might be milk textures, mint chocolate chip cookie or apple rice pudding, hay ice cream and caramelised milk skin. A cheese board, consisting of five powerful cheeses with accompaniments allows for a savoury finish to the menu. There's also a seven course tasting menu (and vegetarian tasting menu) available.
