The sea is miles away, no river flows past, for The Fish is named after the hill on which it stands, because monks once cured fish in caves on the hillside. Part of a 400-acre estate, today's contemporary boutique hotel has an informal Scandi-chic style restaurant. A table on the terrace is a fair-weather treat. The kitchen's output matches the modern mood of the place, so you might start with scallops with smoked duck ham and cauliflower a couple of ways, move onto classic fish and chips, slow-roasted pork belly or a Med-inspired seared salmon with tapenade and salsa verde.
