Built in the mid-19th century as a summer bolt-hole for the Bishop of Worcester, the Cotford Hotel is still in the rest-and-recreation business, its chapel now L'Amuse Bouche restaurant, an attractive room with russet and gold wallpaper. Loch Fyne scallops are flamed in anisette and served on a bed of wild mushrooms, samphire and tarragon with powdered pancetta, while mains deliver cider-braised pork belly stuffed with black pudding or, for the veggies, cranberry, apple and chestnut tart with cashews in basil cream sauce. To finish, dark chocolate mousse is laced with Amaretto and covered in raspberry foam, while banana Tatin is scented with rosemary and is served with clotted cream ice cream.
