The long undulating drive between an honour-guard of mature trees prepares you for an entrance to what could well be one of Sir Noël Coward's stately homes of England, though in rather better repair. The magnificence of Lucknam's interiors is properly jaw-dropping, from a lounge watched over by oil portraits of the notability to a temple-like dining room with a ceiling fresco of cloud wisps in an azure sky. Hywel Jones has loyally manned the kitchens here long enough to have this room now named after him, which is only fitting, as this has been one of the most productive residencies in the Home Counties. The years have sharpened his focus, and the food retains a competitive edge in the modern British era. An opener of flaked Cornish crab is garnished with Exmoor caviar and violet artichoke, its balanced flavours strongly punctuated with the citrus blast of yuzu, or there may be truffle-fragrant poached rose veal with its sweetbreads in pancetta. At main, the signature dishes are done with dazzling panache, when slow-roasted rolled pork belly with apple and foie gras has its richness underpinned by gloriously creamy mash, and on-trend desserts feature a glossy chocolate bar with salt caramel ice cream, honey-roast peanuts and glazed banana. Excellent and varied breads are not to be missed.
