Picture-perfect Arundel, laid out prettily beneath its majestic castle, is home to this bright, airy venue named not after a local cleric but the chef-patron. White walls and unclothed light wood tables furnish a neutral backdrop to thoroughgoing modern British culinary wizardry. Opening the bidding might be accurately timed Scottish mackerel with balled beetroot in two shades, as well as samphire and assertive horseradish cream. Follow that with locally shot partridge and boudin blanc on pearl barley, or spanking-fresh hake with expertly judged crab and spring onion risotto. A classic dessert flawlessly rendered comes in the shape of pear frangipane tart with honey and ginger ice cream.

From east: from A27 at roundabout after Arundel Station, 2nd exit into Arundel. Over bridge left at small roundabout. Up High St. 1st left into Tarrant Street (one way). Restaurant on right hand side in Castle Mews. From west: A27 at Ford roundabout, 2nd exit into Maltravers Street. At castle, into right lane, down the hill into the High Street. 1st right into Tarrant St (one way)
