The Brighton-based Ginger group of restaurants and refashioned pubs has given its country bolt-hole a stripped-down look with parquet and slate floors, chunky tables and brown leather banquettes, plus a beer-garden and raised beds where the Fox's own vegetables are grown. The menu mixes English staples with modern European thinking, producing a braised beef and poached quail egg ravioli with cauliflower purée, spinach, wild mushroom jus and Parmesan to start. For main, a perfectly cooked cod fillet with salt cod brandade croquette, braised onion, garlic cabbage, red wine jus & mustard beurre blanc will certainly appeal as will a pudding of chocolate tart with hazelnut brittle and praline ice cream.
