In the heart of Chichester, this hotel presents a sober, red-brick Georgian exterior, but inside the designers have unleashed a riot of boutique style. Murray's Restaurant is a split-level dining room that works a classy colonial look with palm trees, touchy-feely fabrics, exposed floorboards and unclothed dark wood tables. Brasserie-style menus tick the right boxes, opening with confit duck and wood pigeon terrine with onion purée and toasted sourdough bread, and to follow, there are straight-up slabs of beef from the grill, or pan-seared cod with chorizo cassoulet and braised fennel. Classic French apple tart with cinnamon ice cream provides a simple but effective finisher.
