The Estate Grill chefs use Old Spot pigs reared in the grounds and honey from the apiary, as well as Cumbrian fell-bred lamb. The brasserie menu kicks off with excellent smoked pork with langoustines, apple and turnip, or beef tartare with a duck egg and potato mousse. Then try whole plaice with capers and parsley or 28-day aged rib-eye steak with béarnaise, creamy mash and truffle shavings for main. Sharing platters are possibilities - charcuterie to start and a selection of estate-reared pork for main - and meals end with winning puddings like ginger-flavoured rhubarb mousse with ice cream and parkin, and treacle tart with pear and chamomile sorbet.
