The great chronometer above the portico entrance on the high street is a graphic enough explanation of the name of a place that has seen a fair few years' service to Ripley. Inside, the dining room is done in defiantly plain but tasteful style, with the option of terrace seating in the Surrey sun, and with the emphasis on Fred Clapperton's impressively confident contemporary cooking. A seasonally evolving carte is the core of the operation, with a seven-course taster drawn from it, and a vegetarian alternative too. There is a marked enjoyment of earthier flavours, parsley roots and leaves with a haddock and shrimp starter, alexanders with a pork belly and apple pairing, and kohlrabi and chanterelles to accompany a majestic main course of thoroughbred beef and sweetbreads. For the veggie option, the main matter might be a truffle-scented array of cauliflower with field mushrooms and sea beets, and the final stage mingles sweet and savoury notes productively for chocolate and orange with goats’ milk and olive oil, or a daring combination of pineapple and white chocolate with the smoky fragrance of chamomile.
