This late-Georgian manor house was built by George Basevi, architect of London's Belgrave Square. With views over the balustraded lawns, the prospect is set fair for contemporary, ingredient-led cooking. A pasta starter combines the open lasagne and cannelloni principles for a richly earthy oxtail formula with baby leeks and beetroot, while langoustine could be chaperoned by pickled watermelon, carrot and pork crackling. Stone bass is also crisp-skinned, and comes with wafer-thin cauliflower and vine fruit, and there is further intrigue in a preparation of quail with truffled macaroni, pear, burnt leek and mushroom ketchup. Rhubarb crumble arrives in a tumbler, its crumb top covering layers of jelly and pannacotta.
