A period property of genuine charm, Sutherland House has wooden beams, ornate ceilings, coving and real fireplaces, with fixtures and fittings creating a chic finish. Likewise, the cooking impresses with its modern ambitions, passion for seafood and loyalty to local ingredients. Start with the multiple flavours of treacle-cured salmon with ginger and lemongrass purée, radish, spring onions, pickled beetroot and dill crackers and move on to roast halibut fillet with bouillabaisse sauce and herby new potatoes. A meaty option might be slowly braised belly pork with black pudding, mash, apple fondant and cabbage, and dessert might deliver espresso pannacotta, with local cheeses a savoury alternative.
