Two cottages dating from 1820 have been converted into this unpretentious restaurant where 'Simplicity' is key, although plenty of expertise goes into the cooking. Snails with bone marrow, bacon, parsley, capers and garlic is an alternative to something like lightly curried lamb's sweetbreads with kohlrabi and baby spinach. Main courses can be masterpieces of contrasting flavours: loin of muntjac deer, lightly cooked and rare, as requested, with butternut squash purée, beetroot, fondant potato and raisins spiked with harissa, or fillet of sea bream with spicy aubergine and tomato stew, brown shrimps and salsa verde. Puddings make just as much impact when there's champagne pannacotta with rhubarb, say, or tarte Tatin.
