This privately owned hotel is virtually on Aldeburgh's beach so, naturally enough, seafood tops the bill, freshly delivered along with free-range meat each morning. Whole dressed crab with salad, new potatoes and lemon mayonnaise, lobster with tarragon mayonnaise and potato salad, and perfectly cooked plaice fillets with chunky tartare sauce, petits pois and fries are all possibilities. Or break the mould and opt for asparagus and goats' cheese tart, its pastry crisp and light, with pesto, or potted duck and pork with cornichons and toast, before pink saddle of lamb with wild rice, kale, shallots and a tomato and basil jus. Finish with a perfect sherry trifle or rhubarb fool.
