A grand old Victorian property just down the hill from Stirling's historic castle, The Stirling Highland Hotel was built in the 1850s as a school. The eating takes place in three third-floor dining rooms of generous Victorian proportions. The menu takes a modern approach to some familiar ideas, so a first-course smoked haddock kedgeree is breaded and deep-fried, and served with curried mayonnaise and a quail's egg, and main-course guinea fowl arrives filled with prune mousse and partnered with a fondant potato, Savoy cabbage and butternut squash purée. There's a similarly contemporary approach to desserts, as when rhubarb gets the trio treatment - crumble, fool and sorbet.
