Chef Josh Eggleton is becoming quite a household name these days after his storming 2014 telly performance on the Great British Menu. Away from the limelight, he is to be found at the stoves in The Pony & Trap, a revitalised 200-year-old country cottage pub in lush Chew Valley countryside. A summer's lunch kicks off with chilled courgette soup poured around crab mayonnaise and pointed up with wild chive oil and wood sorrel. Next, a piggy plateful of rare breed pork chop, pulled pork shoulder, home-made 'hodge podge' black pudding, crackling and cauliflower purée hits the spot. For pudding, there's a refreshing key lime pie with lemongrass sorbet.
