Gordon Jones has form in Bath, having run the kitchen in the Royal Crescent Hotel. Now he's doing his own thing in an unassuming little spot with foodies beating down the door. A starter of 'mushroom cappuccino' (cep mousse, smoked milk foam and parmesan madeleine) might be followed by a carnival of flavours and textures, perhaps cured sea trout with popcorn, marmalade purée, cucumber, cauliflower couscous, oca de Peru tubers, capers and mayonnaise. Then squab pigeon may arrive with wheat berries, spinach, mushroom, onion, crispy 'brick' bread and chervil root. Desserts follow the multi-layered approach, perhaps teaming toffee apple mousse with a cinnamon doughnut, white chocolate shards and blackcurrant sorbet.
