Refined simplicity in a Taunton courtyard

The repeated shrilling of the phone serves notice of the popularity of Richard Guest's courtyard restaurant in the town centre where the pared-down contemporary look complements the modern brasserie style food. A warm salad of solferino-balled vegetables accompanies beautifully caramelised scallops to begin, or there could traditional gnocchi with taleggio and rosemary cream. For main, straightforward fish dishes such as turbot with greens in mustard sauce, or John Dory with courgettes and tomato, allow their star performers to shine, while a bowl of rabbit saddle and roasted roots is a paradigm of rustic satisfaction. Finish with crisp-shelled treacle tart with ginger ice cream or lemon posset with summer fruit compôte.
