Owned and run by the Henderson family for more than 40 years, this handsome 18th-century inn is rooted into Melrose life. The kitchen turns out modern Scottish dishes prepared from quality local produce. Yellow split pea and ham soup is a heart-warming classic, or seared scallops with confit potato, truffle mayonnaise and pancetta sauce. This being Scotland, you're never far from game, so follow with venison served with boulangère potatoes, spiced red cabbage and pearl vegetable jus, or pan-fried salmon fillet with chorizo and tiger prawn risotto and herb salad. Finish with an assiette of apple, comprising a nutty crumble, a moist sponge, apple strudel ice cream and vanilla crème anglaise.
