Owned and run by the Henderson family for more than 40 years, this handsome 18th-century inn is rooted into Melrose life. The kitchen turns out modern Scottish dishes prepared from quality local produce. Sweet potato and chilli soup is a heart-warming classic, or twice-baked cheese soufflé with fig, apple and walnut salad and golden raisin purée. This being Scotland, you could even plump for haggis croquette with root vegetable purée. Follow that with fillet of Scotch beef with horseradish mash, braised shallots, charred baby leeks and roast onion jus, or pan-fried roasted cod with Puy lentil casserole, cauliflower purée, pak choi and chive butter sauce.
