Local produce is the backbone of the kitchen's output, some from the estate itself. You might begin with a full-bore partnership of pan-fried quail breast with apple and brandy purée, candied walnuts and balsamic, followed by roast duck breast with cider-braised potato, baby gem lettuce, sweet caramelised onions and a red cabbage purée full of mulled fruit spiciness. Fish is handled deftly, perhaps roast halibut with samphire, pink grapefruit and basil sauce, buttered spinach and a prawn raviolo. Pudding might be lemon curd tart with sweet basil mousse.
