An 18th-century coaching inn made over to chime with our times, The Miller offers sharp modern British output. Flickering candles on smart oak tables set the mood. A starter of warm salmon bradan rost comes with hot and creamy horseradish mayonnaise and a sweet and sticky syrup of mirin and soy, while another might be a refined button mushroom soup with black truffle and pickled mushrooms. Gigha halibut arrives slow cooked in a main course with charred leeks, Jerusalem artichoke purée and a red wine sauce enriched with smoked bacon. Finish with tonka bean pannacotta with pistachio cake and blackberries (fresh, gel and meringue).
