The homage to Thomas Hughes' plucky Victorian schoolboy denotes the fact that this large riverside building was a place of education in the 19th century. A compendious first-course gathering of seared Shetland scallops, Ibérico chorizo, sweet potato and butter bean purée is intriguingly garnished with a strip of dried sweet potato dusted with icing sugar. The follow-up could be superb pork belly accompanied by Savoy cabbage, apple and vanilla purée, and potato and sage terrine in mustard jus, or perhaps fillets of sea bass with an array of artichokes, beetroot, gnocchi and salsa verde. A triumphant finale may be light-pastried chocolate and orange millefeuille with a flavoursome blood orange sorbet.
