Equidistant from Castle Howard and the Yorkshire Arboretum, The Talbot showcases contemporary cooking of distinctive flair. Dressing a Whitby crab involves adding lardo, fennel pollen and a sorrel sorbet as well as the more usual avocado, while a seasonal main course of Dales grouse is roasted in hay, accompanied by its confit leg, mulled red cabbage, salt-baked veg and a bramble and juniper jus. A seafood pairing to conjure with offers wreckfish and crayfish with crispy buckwheat in a rich bisque sauce. The resourceful technical range extends into entertaining desserts such as milk chocolate ganache with rapeseed oil and aerated chocolate, damson sorbet and a caramelised plum.
