The Pheasant has been carved out of a blacksmith's, village shop and barns, all set around a courtyard. The flagstone-floored conservatory is mainly used for dining, and the cooking style is an updated British version of the classical French repertory, with an expert's skill behind judicious combinations. At lunchtime, expect devilled lamb's kidneys with fried bread and watercress ahead of fish pie with a shrimp and caper salad. Dinner might kick off with fennel-cured salmon with beetroot and rosemary and proceed to pan-fried stuffed partridge with mulled pears, spelt and roast parsnips. Tempting puddings include white chocolate parfait with hazelnut ice cream and a chocolate pencil.
