Built in the 1820s, Nidd Hall is a glorious hodge-podge of architectural and stylistic references that take in everything from stained window panels to Tuscan columns. The fine-dining option of the Terrace restaurant manages a light decorative tone in keeping with the graceful version of modern British cooking on offer. Expect to find mandarin and chamomile fragrancing the confit duck and foie gras terrine, and then crispy noodles in seafood broth as a medium for main-course sea bass with mussels. Desserts are just as inventive, serving date and port clafoutis with an apple and brandy shot, rum and raisin ice cream and mint foam.
