Ambitious modern cooking in a moorland country inn

Food is very much a focus at this traditional 19th-century inn on the edge of the moors. Dine either in the bar, with its wood-burner and sofas, or in the comfortable restaurant. The dinner menu is a slate of ambitiously enterprising dishes straight out of the 21st-century school. Start with salmon ballotine with dressed crab and cucumber and go on to rib-eye steak with peppercorn sauce and traditional accompaniments. Or reverse the order: rare beef salad with horseradish, carrots and shallots, then pan-roast sea bream fillet with French-style peas and dauphinoise. Either way, end with lemon tart with raspberries, raspberry sorbet and sorrel.
