Set in a trio of ancient houses spanning the centuries from Elizabethan to Georgian to Victorian, the Black Swan is still a focal point of this lovely little market town in the 21st century, albeit with a rather smart country-chic look these days to offset the old-world charm of its open fires and antiques. The Gallery restaurant (so named because it doubles up as a daytime gallery showcasing original artworks for sale) is where head chef Matt Tyler gets to show off his skills and creative flair. Respecting the integrity of top-drawer Yorkshire ingredients is one of the secrets, as seen in a starter that pairs local ham hock with duck egg and the refreshing acidity of Cox’s apple purée, celeriac remoulade, pickled shallots and watercress salad. Next up, slow-cooked pork belly partnered with boudin noir, pommes Anna, crisp sage leaves and apple purée has impressive depth and clarity of flavour, every component with something to say. For pudding, a heavenly millefeuille of flaky, golden pastry is complemented by salted caramel, almonds and banana ice cream.
