Sprawling through a trio of houses spanning the ages from Elizabethan to Georgian to Victorian, the Black Swan still possesses much of its old character, albeit with a distinctly 21st-century boutique look to go with its antiques and open fires these days. The Gallery restaurant (so named because it doubles as a daytime gallery showcasing original artworks for sale) is where Alan O’Kane gets to show off his confident grasp of modern flavours and combinations, sourcing the finest Yorkshire ingredients and turning them into dishes that wow with their technical flair and beautiful presentation. Bright ideas are there from the off in the home-made sourdough bread with to-die-for beef butter, then an opener of cured mackerel offset by the clean flavours of apple, lemon, cucumber and a knockout oyster ice cream. Next up, superb Texel lamb rump comes with the rich accompaniments of fiery merguez sausage ragout, dukkah spices, sweet red pepper salsa, and gnocchi enriched with lamb fat, or there may be sea bream with black garlic, dashi, purple sprouting broccoli and Anna potatoes. A lively thread of imagination runs all the way through to a delightful finale of strawberries with compressed watermelon, green almond, mascarpone and a lime ‘cigar’.
