Modern brasserie classics in a grand old seaside hotel

Generations of the Mobbs family have run the Imperial since the 1930s, when one of its attractions was that guests were seated at separate tables. Its physiognomy has changed with the addition of a glassed-in terrace for watching the tide roll in, and the Café Cru restaurant, where frosted glass panels divide the booths to demonstrate that separate tables are still the elevated norm. Classic dishes from the present-day brasserie repertoire are the stock-in-trade, opening perhaps with seared scallops and butternut purée in pea vinaigrette, and pressing on with salmon and mussels in white wine and cider sauce, then dark rum pannacotta and raspberries.
