This Georgian townhouse hotel on the quayside in the town's cultural district was once a bank. Inside, a trio of smart dining rooms have polished tables, candlelight and music, and trade in modernised traditional British fare. Start with a slab of Parma-wrapped pork belly terrine and sticky carrot chutney, or double-baked goats' cheese soufflé with Puy lentils, before pressing on to fried ray in cockle butter with crispy seaweed and saffron potatoes, or a 9oz steak in peppercorn sauce. Desserts do their best to look the part and are a little over-zealous in their garnishing, but the principals, perhaps lemon tart and raspberry sorbet, are good enough to stand alone.
