The lush Wye Valley that surrounds this whitewashed former drovers’ inn is also the source of a good deal of the menu, such is chef-patron Chris Harrod’s passion for the food on his doorstep. It’s even possible to join in on a foraging trip. Chris and wife Kirsty run a restaurant with rooms that seems to fit organically into its environment, with stylish neutrally-attired bedrooms and a restaurant that is done out in soothingly light and natural shades. It’s an unpretentious and relaxing setting for dynamic cooking. Long neglected herbs find their way onto the tasting menus (and three-course lunch option), so look out for bittercress, lesser celandine, pennywort, and such like; the former, for example, brings its peppery flavour to an opening dish of creamed barley, roast Jerusalem artichokes and goats’ curd. Duck liver parfait arrives with an accompanying duck croquette, with quince to cut through the glorious richness of the meat, while line-caught sea bass is paired with Swiss chard, blue leg mushrooms and young fennel. There is freshness and vitality to each course, including a wild fallow venison number, with smoked beets and celeriac, all the way to sweet courses like poached pear with buttermilk and yogurt crumble, with the scent of maritime pine. The vegetarian menu shows no less creativity and compelling flavour combinations, roasted cauliflower, say with romanesco, pickled pine and wild chervil. The wine list includes a goodly number of bottles from organic and biodynamic growers, including Welsh and English options, and is organised by style.
