At the heart of Clapham's old town, chef-patron Adam Byatt's Trinity goes from strength to strength. After a dozen years under its belt it's still on a roll. Trinity's open, street-level dining room comes kitted out with contemporary spin – cool pastel tones, an open-plan kitchen and outside terrace, while the wide glass frontage rolls back to give everyone that sunny-day alfresco vibe. The place exudes class and confidence without being stuffy; from in-vogue seating to the efficient, cheery, professional service. Byatt's knockout cooking exudes the same poise and ongoing flair, backed by a focus on ingredient quality and flavour rather than being too tricksy. Underpinned by a classical French theme, dishes raise the bar with a light, creative, modern spin. Take a fathoms-deep tasting opener of ravioli of crab, for instance, accompanied by a gobsmacking broth pepped-up by a hint of ginger and added luxury of an oyster beignet. Staying with the seafood theme, a wild sea trout main might be matched with langoustines, seaweed gnocchi and tomato butter sauce. Desserts tempt with salt caramel custard tart or a classic tarte Tatin to share, while the French-led wine list is a corker. Trinity is the epitome of a top-flight neighbourhood restaurant.
