In the vanguard of design-led new-wave Indians when it opened in 1995, Tamarind’s expansive basement still works a glamorous contemporary chic with linen-clad tables tended by formally dressed, charming staff. The cooking takes its cue from the rich Mogul dishes of the Indian northwest, which makes ample use of the tandoor, but the kitchen likes to experiment with modern European ideas too. Start with gilafi reshmi – minced chicken kebab enlivened with cheese, subtle spicing and mixed peppers – then move on to melt-in-the-mouth Hyderabadi lamb shank or halibut fillet with parsnips and spinach in tomato and kasundi mustard sauce. A six-course tasting menu features signature dishes from Tamarind's repertoire.
