Mark Hix's first outfit in an ever-expanding portfolio perfectly embraces its cool Smithfield setting. Wooden floors, tiled walls and ceiling fans characterise the cool, pared-down space, pepped up by edgy artwork and a jazzy soundtrack. The kitchen reflects the Hix credo of quality seasonal ingredients treated with simplicity, respect and flair. Meats are a strong draw – wild boar ragout with pig skin noodles, followed by the likes of hanger steak with baked bone marrow. Wild ingredients play their part too, as do native and rock oysters, and fish such as Cruden Bay hake with Mylor prawns and sea purslane. Round off with Peruvian Gold chocolate mousse with honeycomb.
