It may not make the boldest of statements from the street – an understated grey awning above folding doors that open up to the Chiswick sunshine – but this is undoubtedly one of the nerve-centres of innovative cooking in west London. The open-plan kitchen is surrounded by a counter with high seating, ringside seats for the spectacular to come. Mikael Jonsson takes a spontaneous, intuitive approach to food, encouraging his brigade to work with the grain of the often recherché and constantly changing ingredients. A dish may not be cooked in the same way within the same session, while tasting menus vary a little from diner to diner. Some of the notable dishes have been the 45-day-aged beef with juniper-smoked potatoes and cabbage, or the scallops that are topped with an emulsion dressing based on potato skins with beef jus. Vegetable dishes are quite as singular, perhaps Cévennes onions with pear shavings and Périgord truffle, while the extraordinary breads play havoc with traditional expectations of texture. Choose from the basic tasting menu, or the longer Carte Blanche format, and sign up for the imaginative wine pairings too.
