Deep in the heart of Soho, Alexis Gauthier's restaurant occupies an unreconstructed Regency townhouse, and it feels only right that there should be a doorbell that must be rung to gain entry, even if the liveried footman who might announce you isn't on hand. The dining room is upstairs, a pristine white-walled space with blinded windows peering down on the street activity and an elegant old fireplace adding the homely touch. Gauthier favours a subtly creative approach to what is essentially classical French cooking, and powerfully popular at that. Black truffle tortellini with pancetta to start looks like an Italian job, but is given French polish by means of a deeply concentrated chicken jus, or there may be Dorset crab with cucumber and lamb's lettuce in citrus dressing. Pedigree meats such as Barbary duck, loin and sweetbreads of veal, or Black Angus beef with purple artichoke, glazed turnips and pink garlic compete for main-course attention with flawlessly executed fish cookery, such as wild sea bass in a potent fish jus with fondant salsify, butternut crush and Cos. Finish with a high-octane chocolate tart made with Amedei Grand Cru, served with silky caramel ice cream, or perhaps a blood-orange trio of sponge, cream and sorbet.
